I love me some mango, especially in salsa.
I don’t know about where you live, but it is blazin’ hot outside, and to be honest, I just don’t wanna make dinner anymore. It’s just too darn hot. So tonight, I protested by making mango salsa instead. There’s nothing wrong with a little chips and salsa for dinner. Nope, not at all.
Mango and Tomato Salsa
(adapted from Jenn Cuisine)
Ingredients:
3 tomatoes, deseeded and chopped
1 small onion, chopped
2 mangoes, chopped
1/2 bunch cilantro, chopped
2 cloves garlic, chopped
1/4 cup jalapeños, chopped (and seeds removed if you can’t take the heat)
2 tbsp. olive oil
1 tbsp. red wine vinegar
juice of 1 small lime
salt & pepper to taste
Directions:
1. Add everything to a bowl and stir.
2. Let sit in the fridge for at least half an hour to let the flavors come together. Serve with tortilla chips.
