Summer Roundup

We have been having a fantastic summer. I hope you have been too. It’s been non-stop fun, and doesn’t look to be slowing down anytime soon, which keeps a huge exhausted smile on my face.

Shredded Beef Enchiladas

Um, hello! I loved these. Cheese smothered, slow cooked shredded beef, with black beans and cilantro in between layers of warm tortillas…what’s not to love?
