 You’re gonna hate me if your New Year’s Resolution is to stay away from baked goods like cookies.

Especially because these cookies are good, real good. Chewy and sweet, with a slightly nutty flavor and texture from the oatmeal. I made the excuse to eat more of these cookies just because there was oatmeal in them. Oatmeal is good for you right?! Right. Glad we are all on the same page here.


Coconut Chocolate Chip Oatmeal Cookies

(From the Queen of Cookies at Two Peas and Their Pod)

1/2 cup unsalted butter, at room temperature
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 1/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 tsp salt
1 cup oats, rolled
1 cup shredded coconut, sweetened
1 cup chocolate chips

Preheat oven to 350 degrees farenheit. Cream together the butter and sugars, stir in egg and vanilla. Next, stir in flour, soda, powder, and salt. Now stir in oats, coconut and chocolate chips. Form into one inch balls and place 2 inches apart on a greased or lined baking sheet. Bake for 12 minutes. The cookies will look slightly uncooked, but let them sit on the baking sheet for a few minutes to finish setting. Remove cookies to cooling rack or right into a glass of milk!
