These are not healthy. DO NOT make these, unless….

Unless for you, right now, healthy means your body needs a stress reliever. And by hand mixing these, it will release tension and aggression within your body. And by eating the dough, it will calm your anxious nerves. And by the time they are baked and set, you can sit down and enjoy these delicious and chewy morsels calmly with the family you love, leaving the days unrest behind you.

Breathe and enjoy…life and cookies (they go best hand in hand you know).

   

Chocolate Chip Peanut Butter Oatmeal Cookies

(from Love Veggies and Yoga)

Yields 2 dozen large stress relieving cookies.

Ingredients
1/2 cup butter, at room temperature
1 1/4 cup brown sugar
1/2 cup white sugar
1/3 cup peanut butter
1 egg + 1 yolk
2 tsp vanilla extract
1 1/4 cup all-purpose flour
1 c old fashioned whole oats
1/2 tsp baking soda
1 cup chocolate chips

Directions
Preheat oven to 325 Fahrenheit.

In a large mixing bowl, stir together by hand the butter, sugars, and peanut butter. Add the egg, yolk, and vanilla; stir.

Next, slowly mix in the oatmeal, soda, and flour, stirring to combine. If the dough is too dry add a bit more peanut butter so that it is the consistency of cookie dough.

Stir in the chocolate chips.

Scoop out golf ball sized balls onto cookie sheet, setting about 2 inches apart.

Bake cookies for 10-12 minutes. Now listen, these cookies will not look done after 10-12 minutes, but they are-trust me. Give ’em a few minutes on the baking sheet before transferring to a cooling rack.

Definitely, have some milk on hand. For best flavor and texture, enjoy these the day they were baked.
