Roast Chicken with Spices, plus My Adventures as an Art Co-oper

This year at my son’s school, I had the opportunity to be an art co-oper. I’ll be honest here, and confess I had no idea what I was getting myself into. I just picked a day that worked for my schedule. Little did I know that art co-opers planned ALL the art for the year. Let me just stop here, and tell you I appreciate art, I enjoy looking at it, pondering it, and owning it.  However, I have no back ground in it. I took an art class here or there, but I recall hardly a thing (kind of like Bio-Chemistry). So I (a dental hygienist) with another brave co-oper (a nurse educator) tackled 1st and 2nd grade art. Chicken and Peanut Curry

150,000 Star rated Curry.

I don’t know about your kids, or honestly if you even have any (do you?), but my kiddos love peanut butter. One of them will eat it like it’s going out of style. No really, I have to limit his peanut butter intake.

I once found a jar of opened peanut butter and a spoon in his room. He goes through a jar of the stuff every week. In fact, as I was making this curry, I had the measured peanut butter out on the counter, and I had to shew him away from it.

So when I told him dinner had peanut butter in it, he was more than happy to try it. I even got his older brother to try it, and the verdict from the boys was two thumbs up. Actually they said it got 150,000 stars. If you don’t have kids, this translates into a really good rating. So good in fact, that they cleaned their plates, and my peanut butter addict even had seconds.

Sweet and Tangy BBQ Chicken

Sweet and Tangy.

I was thinking the other day that if we all start barbecuing on our grills it would be like a chant to mother nature telling her we are ready for the sun to stay.  Grill! Grill! Grill! Sun! Sun! Sun! Well, the sun came out for a few minutes today and I decided it was time. So, in hopes that you will join me in this chant, I am sharing this recipe for deliciously sweet and tangy barbecue sauce.
